Oven baked octopus with potatoes

oven baked octopus with potatos

Ingredients (for 2 persons)
3 tbls of olive oil
400g cleaned octopus
500g potato
3 cloves garlic
1 tbls soya sauce
1/2 cup of water
1/4 cup of red wine
Salt, parsley, chives, green pepper(milled dried green peppercorns), rosemary, laurel, oregano

Pre-preparation:
Marinade octopus in marinade made from olive oil, spices, garlic, water, wine for 30 minutes

Finishing in oven
Put octopus in the middle of baking pan, put potatoes around it. Pour marinating liquid over the potatoe and octopus.
Bake on 180C for 45 minutes.
If there is lot of marinading liquid in baking pan, pour it away, we need just small amount on bottom of the pan to allow octopus and potatos to grill a bit,
I like my octopus little bit charred and potatoes more baked then cooked so I leave it for additional 30 minutes in the oven on 220C.
(If you prefer more cooked version leave more liquid and cook for same time on 200C)
